Changes during early development are extremely common in gaming, but some aspects change more significantly than others. If you can believe it, scenario writer Kazushige Nojima recently confirmed that Final Fantasy X's protagonist, Tidus, was originally conceptualised as a plumber.
Speaking during a recent Famitsu interview - one also featuring key staff members Tetsuya Nomura, Motomu Toriyama and Yoshinori Kitase - Nojima revealed that he made Tidus a plumber to create a reason why characters would get into the water.

However, this was later scrapped in favour of making him an athlete, something that also set him apart from previous protagonists. Adding to this, Nomura, Final Fantasy X's character designer, confirmed that Tidus' outfit was originally part of that plumber design, tweaked to fit an athlete's appearance.
It's not the only time Final Fantasy X's been back in the news recently. During a recent interview, Nomura confirmed that Final Fantasy X-3 remains a possibility, saying the "plot itself does exist" but it wouldn't happen until FF7 Remake is finished.
