The reasons for the delay are due to extra polishing and adding new ideas:

We are currently hard at work developing Crimson Desert, which is rapidly evolving with new adventures and exciting experiences. However, we have decided that we need to dedicate more time to adding new ideas for an even deeper, more enriching game.

Pearl Abyss is also looking to protect the health of the team working on the production:

Therefore, in order to create the best possible experience, all the while ensuring the health and safety of everyone involved in delivering the game, we have decided to delay Crimson Desert’s release.

The pandemic has resulted in many delays for high-profile games such as Crimson Desert. Warner Bros pushed back both Hogwarts Legacy and Gotham Knights, while Lego Star Wars: The Skywalker Saga and Gran Turismo 7 incurred a similar fate.
