How to holster a lightsaber in Star Wars Jedi Survivor
There is only one known way to holster your lightsaber, and that is to simply wait while standing still.
The essence of the method is to stop and stand still for about 5 seconds, after which Cal will holster his lightsaber and you will be free to move without a weapon in your hands. Keep running with it out and Cal won't put it away quickly, which can look strange.
