In order to change your lightsaber in Star Wars Jedi Survivor, you have to first find a workbench. One can be found aboard the Mantis but you have to get through the opening hours of the game first. From here, you simply need to interact with the workbench, click on lightsaber, then blade. From here, you can pick a new colour for your lightsaber.

Though you can get many of the cosmetics through the game, you can only get a handful of them through preordering the game or getting the deluxe edition. This will give you access to many cosmetics at the very start of the game. If you don't want to go through this route, you'll unlock more as you play.
