In short, yes, the PS5 does support Bluetooth, however, it is limited in what it can connect to.

However, Sony has stated in their ultimate PS5 FAQ "USB and Bluetooth keyboards and mice are supported at a system level, though game developers will decide whether to support at a game level"

This suggests, while third-party headsets are not supported, mice and keyboards are.

Whilst the PS5 supports USB and Bluetooth keyboards and mice on a system level, there is only a handful of games that actually support it. These include:

Can You Use Third-Party Bluetooth Headphones On PS5?

While the PS5 does not directly support third-party Bluetooth headphones, it is possible to use them with your PS5 for audio, through the use of a Bluetooth adapter.

If you grab yourself a USB Bluetooth receiver, you can plug this into the console and then pair your headphones to the transmitter.

It is worth noting, that due to latency and interference, these adapters do not work brilliantly with voice-chatting but if you're only looking to use them for audio, then you should have no issues.

You can also get Bluetooth adapters that can plug directly into your TV or monitor or even the DualSense controllers, so there are a lot of options.
