The side quest revolves around catching Belle, a beautiful brown Mountain Chocobo. When the minigame begins, check your right side to find a track and a switch.
Stealthily move towards the switch and long-press to activate it. This will have the carts moving. You must move alongside the cart to keep yourself shielded while heading towards Belle stealthily.
Upon reaching the track's end with the cart, look left and activate the switch there. You'll also find a few rocks lying near the switch. Be sure to pick them up for later.
Start moving alongside the cart you've just called to using the recently activated switch. Up next, press L1 to aim at the switch and the Square to throw a rock to activate. The cart will activate so keep moving along with it to stay hidden.
